Hello Spring!

We may be 6 days from the first day of Spring (Mar 20th) but today was the first day in the Canada household. We enjoyed the 50 degree weather today! It was out to the neighborhood park with Lakyn and Gidget. Unfortunately, Lakyn was intimidated by the equipment. She was totally stoic in the swing, and in fact tried to exit on her own while Lindsey gave her a push or two. The small slide was a one hit wonder. The first time down was educational. The second time down was in protest. The third time she actually shook her head and gave an audible "no" before starting to cry.

She was due for a nap when we decided to take her out to enjoy the weather... good execution, poor plan.

The most important event that went down in the Canada household was the first use of the grill! In previous winters there has been occasional grilling throughout the winter... not this year! There has been no less than a foot of snow around the grill until recently. It has all melted off, except for where it was piled up from shoveling off the driveway.

The inaugural cookout will make your mouths water! In fact I recommend this recipe for a real inexpensive almost genuine BBQ (that means low and slow, not grilling which is hot and fast!) We got an almost 5lb pork roast, only 6.99, real cheap! Fired the grill up for the first time and got it real HOT!! I had some wood chips left in a smoke box from last year and they started smoking, hickory ummm nice. I threw that baby on there and let the flames start lapping at it. Just a few minutes on each side, sear it a little. I took it off the grill and got it set up to 'que. Left only the burner on that was under the wood chips. I turned that burner down all the way to the lowest setting. The temp settled in at about 240ish. Then wrapped the roast in hickory smoked sugar cured bacon. Put it on a piece of foil with curled edges (keep the fat from spilling out into the grill as it starts to drip.) The roast was put on the opposite side of the grill, indirect heat, and let it cook for about 2 hrs.

This is when we took our walk to the park. Upon return I could smell the pork slow cooking as we walked up to the house, even with the grill in the backyard. Then for the last hour, while Lindsey made sweet potato fries, I wrapped the behemoth in foil to finish cook.

Yall this pork could have served 10 people. It was juicy, tender, full of flavor with a nice 1/4inch smoke ring around the edge.

I declare, Spring is here!!!

Bad news of the day, still no Wii!

Yes, the weather has been such a nice change! Glad we can enjoy it together... far apart.

Congrats on the baby #2 by the way! That's very exciting! And it seems like we are right on track with each other this time! Fun.
